Tal Pelter, 37, winemaker and proprietor of the winery, is a son of farmers. The Pelter family has a farm in Moshav Zofit and is engaged in the growth of a variety of foliage and cut flowers as additives to flower arrangements. In following with family tradition, Tal, studied agriculture at the Weitzman Institute in Rehovot and then travelled to Australia to earn a bachelors in wine science from Curtin University. In Australia, Tal gained experience in a small boutique winery - Darlington Estate - located in the hills adjacent to Perth. Upon completion of his studies, Tal worked an additional year at Evans & Tate - the largest winery in Western Australia.
Returning to Israel in 2001, Tal was determined to put into practice the art he studied and his beliefs by establishing a winery of his own. The first winery was built in 2002, by family and friends, on the grounds of the family farm in Moshav Zofit, and was the source of four vintages.
During the course of 2005 Tal, together with his wife Einbar and their two young daughters, Shacham and Aya, moved to Kibbutz Merom Golan in the Golan Heights, where they built a home. In conjunction with the move, Tal transferred the winery to its present location on Kibbutz Ein Zivan in the Golan Heights. The 2005 vintage in the Ein Zivan location resulted in a production of approximately 24,000 bottles.
